Build the calendar backward from three deadlines the state and the park set for you — thirty days, twenty-one days and fifteen days — and then book earlier than that, because the deadlines are legal minimums, not availability forecasts.
The details
T-minus thirty: the park. If the ceremony is on seashore sand, applications should be submitted Apply at least 30 days before — at least thirty days before the requested date — and the ceremony window is typically three hours. Thirty days is the paperwork floor, not the booking floor: popular summer Saturdays are committed months out, and the permit does not hold a date until it is granted.
T-minus twenty-one: the operating calendar. A single temporary food establishment permit caps an establishment's total operating days at 21-day limit — twenty-one days, whether or not they run consecutively — and a TFE commissary may begin up to seven days before the event and operate for its length, not exceeding twenty-one consecutive days. For one wedding weekend this is rarely the binding constraint, but for a caterer running a full season of events it is the reason your date is one of a finite number of operating days on a permit somewhere.
T-minus fifteen: the health department. Temporary food establishments must Apply at least 15 calendar days ahead — file no fewer than fifteen calendar days before commencing operation — and the same rules bar any food preparation before the permit is issued. Substitute vendors get three business days, which is the tightest clock in the whole stack and the reason a backup caterer is not a same-week plan.
The vendor layer between the clocks: chairs, arches and small tables at the seashore go through a park-approved CUA holder — CUA required for wedding equipment vendors, two hours total for set-up and removal — and the authorization behind that vendor started with the Wedding equipment CUA application $350 application. None of that is your paperwork, but all of it is why the vendors who can legally work the beach are booked like everything else.
What the timeline is actually for. The clocks are the floor; the wedding is the plan above them. Tastings, final counts, rentals, staffing and the dietary spreadsheet each need weeks of their own, and every one of them goes better with a caterer who is not simultaneously fighting a fifteen-day application. Our rule of thumb out here: book the summer wedding by winter, the shoulder-season wedding by spring, and start the paperwork the day you pick the date — because every clock above starts running whether or not anyone has looked at it.
